The round, plump Temari-zushi was created as a way of entertaining Kyoto chefs, so that even maiko with their pursed lips could eat it at banquets without ruining their makeup. Muneta has made a healthy change to this dish, using less sugar and salt, and adjusting the flavor with orange juice and spices, while also considering the nutritional balance.
